With the Summer Olympics 2021 underway, our nights and weekends are consumed with the games. And all this competitive energy can make us hungry! We’ve already compiled lists of our favorite Japanese dishes to make for the Olympics and medal-worthy treats and snacks, but if you plan on hosting an Olympics-themed dinner party in the near future we have one more recipe to consider.

Japanese-inspired American dive bar Katana Kitten serves their version of fish and chips, Fish and Wonton Chips, that’s perfect for noshing on while watching Olympians take the gold.

“This dish is our riff on fish and chips, but with a Japanese twist,” says Chef Cyed Adraincen. “Inspired by Japan and the love of sushi, we are using raw fish for this dish. Perfect for a summer games watch party, we use akami tuna with spiced ponzu, sesame scallions and avocado mousse and serve it with housemade wonton chips.”

Fish and Wonton Chips

Ingredients

  • 4-6 oz akami tuna, medium dice
  • ½ cup soy sauce
  • ½ cup dashi
  • 1 cup rice vinegar
  • ½ tsp garlic, grated
  • 1 Tbsp chili crisp in oil

Avocado Mousse:

  • 1 avocado
  • ½ lime, zested
  • 1 lime, juiced
  • 1.75 oz cream cheese, softened
  • Salt, to taste

Fried Wontons:

  • 1 pc scallions, thinly sliced on bias
  • 1 tsp toasted white sesame seeds
  • 1 pk wonton skins, cut diagonally to make triangles

Directions

  1. Dice lean tuna and set to the side and keep chilled.

  2. To make the spiced ponzu, add all ingredients to a medium bowl together and mix well. Set aside.

Avocado Mousse:

  1. In a blender add all ingredients together and blend until smooth puree. Place in a piping bag and set aside.

Fried Wontons:

  1. Thinly slice scallions on a bias, place in cold water and set aside.

  2. Toast with sesame seed in 350F oven until all sides are light brown. Cool down and set aside.

  3. Heat oil to 350F

  4. Fry triangles in 350F oil until golden brown and crispy.

To Assemble:

  1. In a medium size bowl, add 4oz of tuna and 2 tb of spiced ponzu together. Mix until tuna is evenly coated. Set aside.

  2. On plate of choice, pipe avocado mousse as the base of the dish. Should be about 3” in diameter.

  3. Add marinated tuna on top of the mousse. Then garnish with scallions, sesame seeds and a few of the wonton chips.
