Crispy parm carrots are the new crispy parm potatoes.

I’ve been a bit obsessed lately with all the delicious recipes I'm finding on TikTok. So far I've tried (and loved) Taylor Swift's Chai cookies, Danny Loves' appetizing Lasagna Soup and most recently, Stanley Tucci's favorite cheesy panini—which have all been worth the hype.

My latest social media recipe obsession is Crispy Parmesan Carrots made by TikToker Stella Drivas of Hungry Happens. I'll admit when it comes to veggies, carrots have always been at the top of my favorites list, and rightly so, as there are so many ways to enjoy them. Baked, roasted or eaten raw, the typically-orange oblongs are super versatile. Heck, they are even amazing when added to cake or muffin batter.

So here I am, once again smitten by another viral TikTok fan-favorite recipe and sharing it with you. If you are already a carrot fan like myself, you most likely already get what I’m talking about here. What's not to love about a sweet root vegetable that is rubbed with olive oil and spices and rolled in freshly grated Parmigiano-Reggiano?

Why You'll Love TikTok's Crispy Parmesan Carrots

It's understandable why this recipe is trending; it's super easy to make, tastes amazing and is good for you! You really can't go wrong with this one.

  • Customizable: Except for the carrots, all other ingredients can be switched out depending on your preference.

As I mentioned above, these carrots can be completely customizable. I seasoned my carrots with a different mix of spices (using paprika, fresh thyme and oregano) but ultimately the choice is yours. Use what you have!

Another thing I did differently was to eliminate the Parmigiano-Reggiano from the spice rub as I felt the final step of rolling the carrots into the cheese was sufficient. This was a perfect amount of cheese for me but by all means, you should try it both ways if you prefer.

  • carrots

  • olive oil

  • garlic cloves, minced

  • freshly grated Parmigiano-Reggiano cheese

  • spices such as paprika, oregano, thyme

  • salt to taste

How To Make Crispy Parmesan Carrots

1. Preheat oven to 425°F.

2. Slice your carrots into uniform pieces and then slice those in half lengthwise so that each piece has a flat side. The closer the size you keep them, the more evenly they will cook.

3. Add the olive oil, minced garlic and all spices to a small bowl. Add carrots and toss to coat.

4. Put your freshly grated Parmigiano-Reggiano in a small shallow bowl, and dip the flat-cut side of each carrot into the cheese. Getting a nice coating of cheese on the one side.

5. Transfer each carrot onto a baking sheet, cheese side down. Roast for 20-25 minutes or until tender. Time will vary depending on the size of your carrot pieces.

What To Serve with Crispy Carrots

Let me start by saying these carrots are incredibly flavorful and need nothing more. However, if you are interested in a dip to pair with them, this Sizzling Scallion Dip would make a great companion.
