MIDDLEBURG HEIGHTS, Ohio – Fat Head’s Brewery and Cleveland Museum of Natural History have joined forces to craft The Dunk – a Dunkelweizen brewed to honor Ohio’s state fossil fish.

Its name is derived from Dunkleosteus terrelli, which the museum says was one of the fiercest creatures in the Devonian Period. The fish – which weighed up to a ton and was as long as 20 feet – ruled subtropical waters and could munch on a shark with its pair of fang-like protrusions near the front of its self-sharpening jawbones. It was in a now extinct class of fish called placoderms.

The Devonian Period often is referred to as the “Age of Fishes” because of the plentiful and, sometimes, odd fish of the era.

After years of lobbying efforts, the Dunk became Ohio’s official Fossil Fish last year when Gov. Mike DeWine signed Senate Bill 123 into law.

The dark German wheat beer will be available at select museum events, including Night at the Brewseum, a Cleveland Beer Week finale event Saturday, Oct. 16. It also will be on draft and in six-packs at Fat Head’s. The Dunk will be released Wednesday, Sept. 22, at Dunktoberfest, a private reception and tasting for museum members.

The medium-bodied, limited-run beer blends light, crystal and roasted wheat malts and is fermented with a traditional hefeweizen yeast blend. It’s billed as having aromas and flavors of chocolate, banana, clove, bread dough and caramel. It has high carbonation and is a moderate 5.2% alcohol.

“We’ve done dozens of collaborations throughout the history of Fat Head’s,” Bill Wetmore, the brewery’s sales and marketing director said in a release, “but this is certainly the most unique and possessing absolutely one-of-a-kind inspiration. When the Museum called us with the idea, I definitely paused for a moment because it certainly wasn’t your typical pairing, but it just sounded like too much fun and it turned out to be just that.”

Over the years, Fat Head’s has embraced collaborations – with other breweries, home brewers, Cleveland Metroparks and other organizations.
